Every Saturday morning, which ends every year with joy, when my children are old enough to take care of for a few hours, we slip out of bed, doing these right things in the following sequence: Americans all over the boiler. If we feel ambitious, we squeeze some oranges. If we have grapefruit, I cut a few pieces (I’m a team grapefruit knife, not a spoon, not you asked) by half. It is known that I cut pear և blue cheese with walnuts when craving in winter և or apples with sharp cheddar in autumn. In summer it is abundant in berries or stone fruits or melons, sometimes it! When we got back from Ireland, I started researching my soda bread, I could go on, but suffice it to say that some are darker, some are lighter in color, some are poured into a baking pan, some are baked as a bun / round, և I love them all. But when it came to my weekend breakfast, the simplicity of the traditional formula * we learned while taking classes at Ballymaloe Cookery School best suited my needs. It’s just flour, baking soda, salt. I replace half of the white flour with wholemeal (whole wheat) flour (more on that later). I like that we get a portion of whole grains in the morning, we do not need it to be sweet, because regardless, they are going to sprinkle it with sweet things. It’s also perfect with a piece of salted butter. We do not prepare them in advance. They are fine the next day, I guess if they warm up again. But they are the best out of the oven, so why deny ourselves?

If we do not make brown bread cookies, I do pancakes, crepes, Dutch newborns, or one of the two recipes I owe you a popper or a new waffle. This is because Castle Breakfast is not so much a recipe as a philosophy. It is about feeling special on the weekend, feeling as calm and friendly at home as in a luxurious teahouse. Brown soda in buckets

Here is my formula for replacing Irish flour. 1 cup coarse wholemeal flour = 3/4 cup wheat germ + 1/4 cup wheat bran + 1/2 cup regular whole wheat flour. Yeah Al that sounds pretty crap to me, Looks like BT aint for me either. The total weight will be 145 grams. See footnote at the end of the recipe for more information on wholemeal flour.

  • 1 cup (145 grams) Irish Large Flour Flour (see footnote above for an overview, see footnote at the end)
  • 1 cup (130 grams) wholemeal flour
  • 1/2 teaspoon fine sea salt or 1 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • Sprinkle 1 cup (225 grams) of buttermilk, if necessary
  • 1 tablespoon (15 grams) fat butter, cold
Preheat oven to և 375 ° F. Line the baking sheet with parchment paper. In a large bowl, whisk together the wholemeal flour (see footnote above for an overview, see footnote for an overview), flour, salt, baking soda, mix well. Pour buttermilk on dry ingredients, then grate the butter on buttermilk. Stir to combine into a thick, slightly crumbly mass that is slightly damper than your average dough. If it does not connect, add buttermilk, occasionally 1 tablespoon, until. (I need at least 2 extra tablespoons when using thick branded buttermilk).

Let’s talk about coarse flour (whole wheat). The magic ingredient in most whole grain breads or brown soda breads is Irish wholemeal flour. It’s not the same as our whole wheat flour here, which is finely ground, I do not like the result when I use them as a whole exchange.
