I love all chicken noodle soups. Really, I do. I love him Instant Pot version. A crockpot option. Oven version. You name it.

But this one? This is a light cream soup version. Yes, this one completely stole my heart.

Now this is neither a thick nor a super soup, say a clam soup. It is a slightly thickened broth, perfectly lit with creamy goodness.

And you have to use that leftover chicken. Don’t have it on hand? Any type of crushed / diced chicken breast / thigh will work great here.

Creamy chicken noodle soup

Ingredients:

  • 1/4 cup fat butter
  • 1 sweet onion, sliced
  • 3 carrots, peeled and sliced
  • 2 celery ribs, sliced
  • 3 cloves garlic, minced
  • 2 teaspoons finely chopped fresh thyme
  • 1/4 cup flour
  • 1/4 glass of dry white wine
  • 6 cups chicken broth
  • 1 bay leaf
  • Kosher salt և freshly ground pepper to taste
  • 3 cups leftover crushed chicken
  • 2 cups wide egg noodles
  • 1/2 cup heavy cream
  • 1/2 cup frozen green peas
  • Holders of 2 tablespoons chopped fresh parsley

Directions:

  1. Melt the butter in a large saucepan or in a Dutch oven over medium heat. Add onion, carrot and celery. Cook, stirring occasionally, until soft, about 3-4 minutes. Mix the garlic and thyme until fragrant, about 1 minute.
  2. Beat the flour until lightly browned, about 1 minute.
  3. Stir in the wine, scraping any brown pieces from the bottom of the pan. Mix the chicken broth և laurel և; Season with salt and pepper to taste.
  4. Bring; Reduce heat to low and simmer, covered, for about 10 minutes.
  5. Mix the chicken և pasta և cook until soft, about 10-12 minutes.
  6. Mix the thick cream, peas and parsley until warm, about 1-2 minutes; Season with salt and pepper to taste.
