Ingredients:
- 2 medium boiled potatoes, peeled (about 1 1/4 pounds)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 4 tablespoons canola oil, divided
- Kosher salt և freshly ground pepper to taste
Directions:
- Scrape the potatoes through the large holes in the box scraper.
- Using a clean dish towel or a piece of cheese, dry the potatoes completely, removing as much water as possible.
- Transfer the potatoes to a large bowl. Mix garlic powder և onion powder; Season with salt and pepper to taste.
- Heat 2 tablespoons canola oil in a 12-inch cast iron skillet over medium heat.
- Working in batches, grate the potatoes in one layer, stirring, until golden brown, about 5-6 minutes. Turn over and cook on the other side until golden brown, about 3-4 minutes longer. Repeat with the remaining canola oil and potatoes.
- Serve immediately.
